Ceci con castagne caldarroste

La ricetta per i ceci con castagne caldarroste ė nata per caso. A novembre abbiamo raccolte le castagne nei monti Cimino vicino Viterbo.

 

 

Appena tornata a casa le ho lavate. Alcuni le ho lasciate in frigo per mangiarli a novembre e il resto e le ho messe in sacchetti di plastica e le ho congelate. Oggi ho voluto sperimentare questo piatto. Normalmente si lessano le castagne per questo tipo di preperazine ma sbucciarle non ė facile perché si rompono facilmente. Invece le castagne caldarroste (arrostito) è molto più semplice da pulire.

Ingredienti per i ceci con castagne caldarroste

(per 6-8 persone)

  • 600 g di ceci secchi
  • 1 spicchio d’aglio
  • 1 rametto di rosmarino appena raccolto
  • 1 kg di castagne
  • olio extra virgine di oliva
  • Pane raffermo
  • Sale
  • pepe nero

Procedimento per i ceci con castagne caldarroste

Mettete a bagno i ceci per 24 ore, cambiando l’acqua due volte. Trascorso il tempo scolateli. Mettete i ceci in un tegame con acqua abbondante e portate a bollitura. Togliete la schiuma e impurità con un cucchiaio.  Prendete un spicchio d’aglio, lo legate dentro un rametto di rosmarino con lo spago da cucina e aggiungetelo nella pentola. Lasciate cuocere lentamente a fuoco dolce fino a che diventano teneri, circa 3 o 4 ore (dipende dalla varietà alcune cuocino in meno tempo).  Togliete il pacchetto di rosmarino e aglio dopo circa un ora.  Aggiungete il sale e pepe o peperoncino a piacere. Passare una piccola parte della zuppa in un setaccio direttamente dentro il tegame così formerà una cremina.

Nel frattempo preparate le castagne caldarroste. Se sono fresche fate un incisione e arrostitele.

Invece se usate quelle congelate con la buccia, immergetele per qualche minuto in acqua calda dal rubinetto se non volete congelare la mani mentre le incidete. Poi scolatele e incidetele sulla parte piatta. Cuocetele nella pentola buccata sul barbecue, oppure sopra il fornello o  nel grill del forno.  Sbucciatele e mettetele da parte.

Potete servire la zuppa di ceci con castagne caldarroste solamente  con un filo di olio extra vergine d’oliva oppure con l’aggiunta di pasta corta o con crostini di pane.

Per i crostini tagliare il pane casareccio a cubetti, ungete di olio extra vergine d’oliva e grigliate nel forno.

In questa versione ho aggiunto la fregola sarda e castagne caldarroste.

Nota

Per un risultato eccellente vi suggerisco di utilizzare i ceci secchi e non quelli precotti in scatola.

Il consumo della zuppa di ceci e castagne è diffuso in Umbria, Abruzzo, Toscana e Lazio regioni nelle quali si possono trovare varie version della ricetta. Le origini di questa zuppa sembra siano molto antiche, se ne trovano tracce in un trattato di cucina del 1200. Questa ė la mia versione della ricetta di ceci con castagne caldarroste.

The recipe for chick peas with roasted chestnuts  was born by chance. In November we collected chestnuts in the Cimino mountains near Viterbo. As soon as I got home, I washed them.  I left some in the fridge to eat them in November and the rest and I put  in plastic bags and froze them. Today I wanted to experiment with this dish. Chestnuts are normally boiled for this type of preperation  but peeling them is not easy because they break easily. On the other hand, roasted chestnuts are much easier to clean.

Ingredients

(for 6-8 people)

  • 600 g of dried chickpeas
  • 1 clove of garlic
  • 1 sprig of freshly picked rosemary
  • 1 kg of chestnuts
  • extra virgin olive oil
  • bread
  • salt
  • black pepper

Procedure

Soak the chickpeas for 24 hours, changing the water twice. The following day rinse drain them. Put the chickpeas in a pan with plenty of water and bring to boil. Remove the foam and impurities with a spoon. Take a clove of garlic, and make a small package by wrapping rosemary around the garlic and tie it with with kitchen string. Add this package to the pot. Cook slowly over  gentle heat until the chickpeas  become tender, about 3 or 4 hours . Depending  on the varity some chickpeas cook in less time.. Eliminate the package of rosemary and garlic after about an hour. Add salt and pepper or chilli to taste. Pass a small part of the soup in a sieve directly inside the pan so it will form a creamy sauce.

Meanwhile prepare the chestnut. If they are fresh, make an incision and roast them. Instead, if you use frozen ones with their peel, immerge them in hot water for a few minutes from if you do not want to freeze your hands while you are cutting them. Then drain and incise them on the flat side. Roast them on an open fire on the barbecue, or on the stove or in the oven grill. Peel them and put them aside.

When done  serve the  chickpea soup with roasted chestnuts only with a drizzle of extra virgin olive oil or with the addition of short pasta or croutons. For the croutons, cut the  bread into cubes, pour a drizzle of extra virgin olive oil and grill them in the oven or cook  them In a  pan.

Note

For excellent results I would recommend that you use dry chicpeas and not pre cooked canned chickpeas.  The consumption of chickpea and chestnut soup is widespread in Umbria, Abruzzo, Tuscany and Lazio regions where you can find very different versions of the recipe. The origins of this soup seem to be very old, traces can be found in a treatise on cuisine from the 1200s. This is my version of the chickpeas soup with chestnuts. In this version I added Sardinian fregola and roasted chestnuts.
