L’idea per la crostata di ciligie e mirtilli in gabbia mi ė venuta per utilizzare la frutta di stagione  presente in frigorifero.

Ingredienti per la crostata di ciliegie e mirtilli

Pasta frolla

  • 250 gr di farina
  • 100 gr di olio EVO oppure 100 gr di burro
  •   80 gr di zucchero di canna
  •   50 gr (n. 1) d’uovo intero
  •   buccia grattugiata di 1 limone
  •   un pizzico di sale
  •   ½ bustina di lievito per dolci oppure 1 cucchiaino di polvere lievitante (baking powder).

Impastare tutto e lasciare riposare in frigo per 30 minuti o nel freezer per 10 minuti.

Per spalmare

  • 1 vaso di confettura di fragole

Crema

  • 100 gr di panna
  • 100 gr (n. 2 d’uova)
  •   30 gr  di zucchero

Sbattere la panna con lo zucchero poi aggiungere 2 uova e amalgamare tutto.

Inoltre

  • 100 gr di mirtilli
  • 100 gr di ciliegie denocciolate e tagliate in due

Procedimento per la crostata di ciliegie e mirtilli

Stendere la pasta frolla lasciando un pezzo per i decori.   Ricoprirla con la confettura di fragole.  Versare sopra la crema. Posizionare i ciliegie denociolate e tagliate a metà.

Stendere la rimanente pasta frolla e formare un reticolato con l’aposito attrezzo e appoggiarla sopra la farcitura.  Nei fori posizionare i mirtilli.   Infornare nel forno preriscaldato a 180 gradi per 50/60 minuti.

Spegnere il forno e accendere il grill. Spolverare la crostata con lo zucchero a velo e rimettere sotto il grill per caramellare lo zucchero.  Lasciare raffreddare La crostata di ciliegie con mirtilli in gabbia.

Last summer I had blueberries and and cherries in the refrigerator, so I decided to use them for baking a dessert.

Cherry tart with caged blueberries

Pastry

  • 250 gr flour
  • 100 grams of oil (extra virgin olive oil) or 100 grams of butter
  •   80 grams of brown sugar
  •     1 whole egg,
  •      zest of 1 lemon
  •     a pinch of salt
  •     1 teaspoon of baking powder.

Mix everything together  and let stand in refrigerator for 30 minutes or in the freezer for 10 minutes.

For the spread

  • 1 jar of strawberry jam

Filling

  • 100 grams of cream
  •  100 grams (nr. 2) eggs
  •    30 grams of sugar.

Beat the cream with the sugar, then add 2 eggs and mix until amalgamated.

In addition

  • 100 grams of blueberries
  • 100 grams of pitted cherries (cut in half)

Roll out the pastry, leaving a piece for the  decoration. Cover with the strawberry jam. Pour over the cream. Place the pitted cherries (cut in half) .  Roll out remaining pastry and  form a grid with the specific tool and place it on top of the filling.  Position the bluberries in the holes. Bake in a preheated oven at 180 degrees for about 50/60 minutes.

Turn off the oven and turn on the grill. Sprinkle the tart with icing sugar and put under the grill to caramelize the sugar. Allow to cool.
