Zuppa di ceci e cavolo nero
La zuppa di ceci e cavolo nero ė un sostanzioso primo piatto che potete servire con croccanti crostini di pane oppure pasta corta.

Ingredienti per la Zuppa di ceci e cavolo nero

Per la zuppa

  • 500 g di ceci secchi
  • 200 gr di cavolo nero
  • 1 gambo di sedano
  • 1 cipolla
  • 1 scalogno
  • 2 pomodori ramate mature
  • 2 cucchiai olio extra vergine d’oliv
  • Sale

Per i crostini

  • 6 fette di pane casereccio
  • Olio extra vergine d’oliva

Procedimento per la zuppa di ceci e cavolo nero

  1. Mettete a bagno i ceci per 48 ore, scolateli. Ho usato i ceci comprato a Viterbo ed è bastato soltanto 12 ore di ammollo.
  2. Mettete i ceci in un tegame con acqua abbondante e portare a bollitura. Togliere la schiuma e impurità con un cucchiaio.
  3. Nel frattempo tritare la cipolle, lo scalogno e tagliare a cubi il sedano e fate tutto a fuoco dolce in un tegame di ghisa o terracotta con un filo d’olio evo. Aggiungere i pomodori tagliate a cubetti e subito i ceci con l’acqua di cottura e mettere il coperchio. Lasciare cuocere lentamente a fuoco dolce per 3 ore 30 minuti finche diventano teneri.
  4. Lavate e scolate il cavolo, tagliare a striscie e unite alla zuppa. Fate insaporire per 20 minuti, salate e pepate.
  5. Passare una piccola parte della zuppa in un setaccio direttamente dentro il tegame così formerà una cremina.
  6. Per i crostini, affettate il pane e tagliatelo a dadini. Mettere in una teglia e versare sopra un pò d’olio extra vergine d’oliva, fatelo tostare nel grill del forno o in una padella.
  7. Servire la zuppa calda, aggiungere sopra i crostini e mangiare subito così rimangono croccante.

 

English Translation – chickpea and black kale soup 

Ingredients for Chickpea and Black Kale Soup 
  • 500 g of dried chickpeas
  • 200 g of black cabbage
  • 1 stalk of celery
  • 1 onion
  • 1 shallot
  • 2 ripe copper tomatoes
  • 2 tablespoons extra virgin olive oil
  • salt
For the Croutons 
  • 6 slices of homemade bread
  • Extra virgin olive oil
INSTRUCTIONS
  1. Soak the chickpeas for 48 hours and drain them. I used chickpeas which I bought in Viterbo and it took only 12 hours to soak.
  2. Put the chickpeas in a pan with plenty of water and bring to a boil. Remove the foam and impurities with a spoon.
  3. In the meantime, chop the onion, the shallot and cut the celery into cubes and cook everything in a deep pan with a drizzle of extra virgin olive oil. Add the diced tomatoes and immediately the chickpeas with the cooking water and cover with the lid. Simmer over low heat for 3 to 3 and 1/2 hours until they become tender.
  4. Wash and drain the kale cut into strips and add it to the soup. Cook for 20 minutes, season with salt and pepper.
  5. Pass a small part of the soup in a sieve directly inside the pan so it will form a creamy sauce.
  6. For the croutons, slice the bread and cut into cubes. Put in a pan and pour over a drizzle of extra virgin olive oil, toast them in the oven grill or in a pan.
  7. Serve the soup hot. Add the croutons and eat immediately so that the croutons remain crisp.
